And if you're a fan of hummus, you can even enjoy them with a side of homemade hummus.

Amount: 3 1/2 Cups

Servings: 7 – 1/2 Cup

Preparation Time: 10-15 Minutes

Cooking Time: 20-25 Minutes

Total Time: 30-40 Minutes

Ingredients:

  • 2 cans (14 oz) chickpeas

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons maple or allulose syrup

  • 1 1/2 teaspoon low-sodium soy sauce

  • 1 teaspoon finely chopped fresh thyme, oregano, or rosemary

  • 1/2 teaspoon garlic

  • 1/2 teaspoon smoked paprika,

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon cumin

  • Pepper to taste

Instructions:

  1. Preheat your oven to 400° F (200º C) and line a baking sheet with parchment paper.

  2. Add the ingredients to the baking sheet and toss throughly.

  3. Bake for 20-25 minutes and toss the chickpeas once or twice until the sauce is almost absorbed.

  4. Remove the chickpeas from the oven while they are still moist. (These are meant to be tender but not crunchy.)

  5. Serve warm for appetizers or at room temperature for snacks and salad toppers.

  6. Enjoy!

Instructions (With Hummus):

You can also eat this recipe with hummus as a dipping sauce for the chickpea bites. Here's how you could do it.

  1. Make the chickpea bites according to the recipe instructions.

  2. Prepare the hummus (detailed recipe coming soon) by blending 1 can of chickpeas, 2-3 cloves of garlic, 1/4 cup of tahini, 1/4 cup of olive oil, 2-3 tablespoons of lemon juice, and salt to taste in a food processor until smooth.

  3. Serve the chickpea bites with the hummus on the side for dipping.

  4. Enjoy!

You could also toss the chickpea bites in a tablespoon or two of the hummus before baking them in the oven to add extra flavor. Just make sure not to add too much hummus, as it could make the chickpeas too moist and affect the texture.

Eating With Hummus

Chickpeas can be a bit difficult to dip because of their small size, but there are a few ways you can make it easier:

Use a Toothpick

You can use a toothpick to pick up individual chickpeas and dip them into the hummus.

Serve in a Bowl

Another option is to serve the chickpeas and hummus in a bowl together.

Use a Spoon

You can use a small spoon to scoop the hummus with few chickpeas.

Whichever method you choose, ensure you adjust the amount of hummus sauce to avoid making the chickpeas too soggy.

Cooking Tip:

To make the chickpeas crunchier, you can leave them in the oven for an additional 5-10 minutes, depending on your desired level of crispiness. Keep an eye on them and toss them every 5 minutes to ensure they cook evenly and don't burn. Once they are crispy to your liking, remove them from the oven and let them cool before serving.
